Depends.
If u r living in a house, yes, as u need coverage at multiple floors. If apartment, depends on ur carpet area.
Google WiFi comes with 1 device or box of 3 (devices). The reason u need more than one is to create a mash wifi environment -- provide abetter coverage by minimizing blind spot. Down side it, it cost more.
Generally speaking, in HK, a single access point should be good enough. Users, every now and then, complained that they didn't receive signal inside bedroom was mainly due to location -- placing their modem at a less prefer location, say, behind the TV, inside TV cabinet, corner in the living room ...
