It seems your maid doesn't have idea of her own (it's a bit difficult when she has a mother that negative). I would let her go if I were you. Even if she stays this time, how can you guarantee that she won't resign again in the future? 一個人有離心就it's not worth keeping, especially she has such a troublesome mother.
If you decide to let her go, make sure all documents are signed properly and the whole process is recorded, otherwise your maid's mother might do something irrational.
My maid came less than a month ago and has resigned 3 times. I did not keep her the last time she said she wanted to quit. Now I have to look for another one.
