Dear all 'si fu',

I've a question in relate to baking bread...

I've tried few times to bake bread but the result is not good...

coz

1. too hard!!! even I mix the right propotion of bread flour, yeast (I use dry yeast in Parkn shop), egg, warm water, salt, sugar...

I guess it may relate to 發酵?

how can u 發酵 the bread mixture in a warm place??? I just place the mix in a bowl and cover with plastic wrap,,, is it okay?

how abt 2nd 發酵... same theory?

coz I can't find the mix grows up!!!

hello Zen si fu,

thanks for your advise. Yes, I use the 理想牌 yeast...

麵糰要搓到出筋... mmm, yes but is it even when I can make this... but still need to 搓 for 20 or 30 mins before settle them in a bowl???

ic, put a bowl of hot water in the oven... but the book said 25'C... is it matter to follow the temp or okay in placing in room temperature?

Why we need the 2nd time 發酵? Is it the 2st time 發酵 will make the bread grow up... and how abt the 2nd time... also grow up more???

Sorry for so many problems.,.. coz I want to make bread at hoem coz I've brough my oven for some times but only for making cakes and bake pasta... czo not success in making bread so far
