1)500g水加入高筋粉100g
2)將水與高筋粉攪拌均勻
3)放在爐上加熱,需不停攪拌,以防鍋底燒焦.
4)加熱至65度c離火,麵糊在攪拌時會有紋路出現的狀態.
5)在麵糊表面貼上一層保鮮紙,降到室溫後使用(防水分流失及表面結皮)


北海道牛奶吐司(出處:65度C湯種)

材料:

A:高筋粉540g,細砂糖86g,鹽8g,快速乾酵母11g
B:全蛋86g,whipping cream 59g,牛奶54g,天然牛奶香料9g,湯種184g
C:無鹽牛油49g

製作過程:

1)基本發酵:約40分鐘(溫度28度c,濕度75%)
2)分割滾圓:4個,每個265g
3)中間發酵:15分鐘(室溫即可)
4)整形
5)最後發酵:約模型8分滿(温度38度c,濕度85%)
6)烤焙:上火150度c�下火180度c,約烤焙35分鐘

各位好!我呢排試左好多次整法式麵包, 但每次焗出來都很硬,而且包的顏色很淺,不是金黃色的,為什麼呢?

Dear dayday,

Don't know whether you got the recipe or not. Anyway, this is the one I learned from Twins Company. It yields 7-8 pcs of bread :

1. Bread Flour 250g
2. Sugar 30g
3. Salt 3g
4. Milk Powder 7.5g
5. fresh yeast 10g
6. egg 1 pc
7. water 110g
8. unsalted butter 37.5g

Mix 1-5 together, then add egg and water. Make it become a dough that is soft and tender. Add butter and mix well. Put the dough into sealed plastic bag for 30 minutes. Then cut into 7 or 8 equal pcs. Wait for another 15 min. Then you can use the dough to make sausage bread, or just roll it up and sprinkle some sesame on top. Put the dough in wet & warm environment for 20 min. (you can just put 1 cup of hot water inside the microwave oven and put the dough inside with the door closed. No need to turn on the microwave). Spread a thin layer of mixed egg yolk on top of the dough. Pre-heat oven at 190-200 degree, then put the dough into it and bake for 10 min.

Hi Jwong,

I want to try your recipe, but want to know how to mix the dough and how tender(or how long if I use a bread mixer) should be?

I will buy a cake/bread mixer, with a mixing bowl, do you have any good suggestion. Philips/Kenwood or any other???

你講個個攪拌器係唔係可以攪太多既麵糰架,唔係會燒架∼

I am not sure if the mixer can mix a big dough, the one I am looking for is the Philips Mixer, 350W, 3L.
Have you ever use this kind of mixer (with a mixing bowl)??

2.fresh yeast 可在百x買到?
3.egg是全隻?
4.cut to 7-8pcs後,要唔要用袋裝住?
5.我只得多士焗爐,焗時要用錫紙蓋住嗎?
6.最重要:是否要用機攪面團,我冇,只用手搓得唔得?
